Thank you for this keto caramelized pork belly recipe… I was looking for the Cambodian style 'Kaw', which is basically the same but with (keto friendly) hard boiled eggs added and black pepper corns ground up with fresh garlic until it becomes a paste is also added to season the pork belly after it has been partially fried (well that is how my Khmer mother-in-law does it anyway). In addition to the above, I plan on adding asparagus and thai chili peppers 🌶

Can you define "low carb"? I'm doing therapeutic keto and probably do 3 or 4 carbs a day and zero sugar or substitutes.

I love Thit Kho and couldn't figure out how to make this keto. I usually add boiled eggs while its braising. Its pierced with a fork to allow the sauce to seep in. Its my kids favorite. Also, if the sauce is really concentrated, I'll add shrimp instead of eggs and a chili pepper. I've learned to eat this over a salad of Thai basil, mint and lettuce instead of rice.
